// Rules we roast by

The
manifesto.

Written on the roastery wall in 2021, unchanged since. If we ever break one of these, call us out — the number's on every bag.

01

Fresh or nothing.

Coffee is produce. Every bag carries its roast date, ships within 48 hours of the roast, and never leaves the building older than seven days. Supermarket shelves are where beans go to die.

02

Farms have names.

Every label names the farm or washing station and the price we paid — always above fair-trade minimums, paid direct where the export chain allows it. Middlemen hate this one trick.

03

Flavor over fashion.

We don't chase roast-trend Twitter. If a coffee tastes best 30 seconds past "fashionably light," that's how it's roasted. Blind cuppings decide, egos don't.

04

No gatekeeping.

Brew guides on every bag, free grind-to-your-kit, and baristas who explain without the eyebrow. Specialty coffee that makes people feel stupid is bad specialty coffee.

05

Leave no trace.

Compostable bags, refill discounts at all three cafés, spent grounds collected for city gardens. The planet drinks with us.
